Lasaña de verduras

Pesto ‘Cheese’ Sauce:
Handful Basil
Handful Parsley
80ml good quality Olive Oil
135g Pine Nuts
3 cloves Garlic
20g Nutritional Yeast
Salt & pepper to taste
‘Cheese’ Sauce:
1 bag Follow Your Heart Vegan Mozzarella Gourmet Shreds
1 Pack ‘No Moo Melty’ Cheese
4 Stalks chopped Parsley

Tomato Sauce:
2 cans chopped tomatoes
Small handful chopped olives
Small handful capers
2 finely sliced small red onions
4 garlic cloves
Salt & Pepper to taste

2 sliced Aubergines (Eggplant)
2 sliced Courgettes (Zucchini)
2 sliced Yellow Bell Peppers
2 sliced Red Bell Peppers
8 Lasagne Sheets (or 12, depending on the depth of your lasagne dish)
1 Block grated Violife Cheese

1. Griddle the Aubergine, Courgette & Peppers. Use a griddle pan and not much oil, and if you’re feeling fancy, try to get nice char lines on them. Keep them aside for later.
2. In a frying pan fry the onions & garlic until soft
3. Add the chopped tomatoes & fry for 10 minutes
4. Add the Capers & olives to the sauce, cover & gently simmer for 30 minutes until the flavours have mixed together wonderfully. Keep the tomato sauce aside also.
5. Put all the pesto ingredients into a food processor & blend. Keep to one side.
6. Add the Cheese Sauce ingredients into a small pan & melt down to a thick paste (cheese sauce).
7. Put the cheese sauce & freshly made pesto in a bowl & mix together.
8. Cover the base of the lasagne dish with a thin layer of tomato sauce
9. Add lasagne sheets
10. Add a layer of pesto cheese sauce
11. Add a layer of Violife cheese sauce
12. Add a layer of griddled peppers (fill in gaps with Aubergine & Courgette if there are any)
13. Press down with your hands
14. Repeat the process until the lasagne dish is full to the brim
15. IMPORTANT – Cover the lasagne dish with tin foil
16. Bake the lasagne for 40 minutes at 200?
17. Take the tin foil off and give it a further five or ten minutes (to get the cheese nice and melted)
18. Serve with side salad
